Ontario Tender Fruit Pizza

Makes 10 to 12 servings.

Ingredients

1-1/2 cups all-purpose flour 375 mL
1/3 cup icing sugar 75 mL
3/4 cup butter, softened 175 mL
4 cups sliced Ontario Peaches, Pears and Plums 1 L

Glaze

2 tbsp each: cornstarch and granulated sugar 30 mL
1/3 cup orange juice 75 mL
1/2 cup red currant jelly 125 mL

 

Directions

In medium bowl, combine flour and sugar; add butter and knead together into soft dough. Press into bottom of 11-inch (28 cm) springform or pizza pan. Prick with fork. Bake in 350°F (180°C) oven for 15 to 20 minutes or until light brown. Drain peaches, pears and plums. Arrange over pizza crust.

Glaze:

In double boiler, whisk together cornstarch, sugar, orange juice and red currant jelly. Cook, stirring 3 to 5 minutes or until thickened. Pour gently over fruit and refrigerate.
