Ontario Tender Fruit Pizza
Makes 10 to 12 servings.
|1-1/2 cups||all-purpose flour||375 mL|
|1/3 cup||icing sugar||75 mL|
|3/4 cup||butter, softened||175 mL|
|4 cups||sliced Ontario Peaches, Pears and Plums||1 L|
|2 tbsp||each: cornstarch and granulated sugar||30 mL|
|1/3 cup||orange juice||75 mL|
|1/2 cup||red currant jelly||125 mL|
In medium bowl, combine flour and sugar; add butter and knead together into soft dough. Press into bottom of 11-inch (28 cm) springform or pizza pan. Prick with fork. Bake in 350°F (180°C) oven for 15 to 20 minutes or until light brown. Drain peaches, pears and plums. Arrange over pizza crust.
In double boiler, whisk together cornstarch, sugar, orange juice and red currant jelly. Cook, stirring 3 to 5 minutes or until thickened. Pour gently over fruit and refrigerate.
