Apricot

Apricots were first grown in China more than 3,000 years ago. Over the centuries, the apricot spread to the rest of the world, as more and more people came to regard this juicy, delectable fruit as one of their favourites. A relative of the peach , the apricot is smaller and has a smooth oval pit that falls out easily when the fruit is halved. In colour, the skin can range anywhere from golden cream colour to a brilliant orange. Selecting & Handling When buying apricots, select plump, reasonably firm fruit with a uniform colour. To ripen immature apricots, place them in a brown paper bag and fold closed. Keep them at room temperature until they are slightly soft. Once the fruit is ripe to your liking, refrigerate for up to a week.
